Instructions
Bring milk to 82ºC
Take milk off of fire and let cool back down to between 50ºC and 37ºC
When the milk has reached the appropriate temperature, mix in the starter into the lukewarm milk and stir for 3 minutes
Loosely close lid and place container in oven with light on for about 5 hours, or overnight
When the yogurt has set, refrigerate until fully set, up to 12 hours
Notes
Yogurt starter needs active cultures. Make sure to save some yogurt for your next batch
