Ingredients
4½ cups old-fashioned rolled oats
2 cups sliced almonds
1 cup ground flaxseed
2 Tbsp brown sugar
2 tsp ground cinnamon
½ tsp salt
1 cup honey
4 Tbsp unsalted butter, browned
4 Tbsp coconut oil
4 tsp vanilla extract
Instructions
Preheat the oven to 325ºF and line a baking sheet with parchment paper
In a large bowl, whisk together the oats, almonds, flaxseed, brown sugar, cinnamon, and salt
Heat a small saucepan over low heat and add the honey, brown butter, coconut oil, and vanilla extract. Stir until the liquid is warm and the ingredients have melted together
Pour the mixture over the oats and stir to coat
Spread evenly over the parchment-covered baking sheet
Bake for 10 minutes, then use a spatula to toss the granola
Bake 10 minutes more and toss again
Bake for an additional 10 minutes, tossing twice during the cooking time
Remove pan from oven and let cool completly
Notes
Different seeds and nuts can be used. Honey can be substituted for maple syrup or a combination of maple syrup, tahini, honey
